Grilled Buffalo Chicken Sandwiches

Who doesn’t love Buffalo chicken? I know in my household, it’s an all-time favorite and I have started making these sandwiches in my regular rotation of recipes. These are simple to make, which is great for busy weeknights. Serves great with french fries or onion rings or both.


  • 2 pounds boneless skinless chicken breast
  • Salt, pepper and garlic powder to taste
  • 1 cup Frank’s hot sauce or any favorite hot sauce
  • 3 tablespoons unsalted butter
  • 6 of your favorite deli rolls, I use ball park deli rolls
  • 6 slices provolone cheese

Optional Ingredients

  • 1 white onion, cut into rings and sauteed
  • 8 oz portabella mushrooms, sauteed


  1. Preheat your grill on high and clean the grates
  2. Sprinkle salt, pepper and garlic powder on both sides of the chicken breasts and let sit while the grill preheats
  3. Cook chicken on the grill until the inside temperature hits 165° far
  4. While the chicken is cooking, melt the butter and let cool slightly
  5. Add 1 cup of hot sauce to a food processor and turn it on low
  6. Add the cooled, melted butter to the food processor, emulsifying it with the hot sauce
  7. Once chicken is done cooking, letting it rest for about 5 minutes, cut it up into small pieces and add to a bowl.
  8. Take the emulsified hot sauce and butter mixture and add it to the bowl and mix together and let sit for a few minutes so the chicken can absorb the sauce
  9. Get the rolls opened on a baking sheet and add about 4 ounces of chicken to each one and cover with the provolone cheese
  10. Turn on broiler in oven on high and put sandwiches underneath to let the cheese melt and brown
  11. Serve with ranch or your favorite dressing and enjoy
