Caprese Pasta Salad


Easy dish that’s great for summer parties and BBQs!


1 lb box pasta, farfalle or rotini

1 pint of cherry tomatoes, halved

1 lb fresh mozzarella, perlini preferred, other wish 1/3 ounce size, quartered

1/4 balsamic vinegar

1/2 cup olive oil

2 tsp mayonnaise

Fresh basil leaves

Salt and pepper to taste


  1. Cook pasta to al dente, about 11-12 minutes
  2. Drain and let cool. Do not rinse pasta
  3. Once cool, mix in the tomato halves and fresh mozzarella
  4. Whisk balsamic vinegar, oil and mayonnaise together to emulsify to make dressing
  5. Pour over the pasta and stir to mix together
  6. Chiffonade basil and mix into salad
  7. Finish off with salt and pepper
