Easy dish that’s great for summer parties and BBQs!
Ingredients
1 lb box pasta, farfalle or rotini
1 pint of cherry tomatoes, halved
1 lb fresh mozzarella, perlini preferred, other wish 1/3 ounce size, quartered
1/4 balsamic vinegar
1/2 cup olive oil
2 tsp mayonnaise
Fresh basil leaves
Salt and pepper to taste
Steps
- Cook pasta to al dente, about 11-12 minutes
- Drain and let cool. Do not rinse pasta
- Once cool, mix in the tomato halves and fresh mozzarella
- Whisk balsamic vinegar, oil and mayonnaise together to emulsify to make dressing
- Pour over the pasta and stir to mix together
- Chiffonade basil and mix into salad
- Finish off with salt and pepper
